Joe Clark uses family cooking to start business

Ultimate Choice Catering Italian FoodJoe Clark received the cooking gene.

But the ironic part is that it's his sister's lack of the gene that helped push clark into the catering business.

Clark said he always loved to cook, and began sending dinner home with his sister and her daughter so they could have a nice meal to eat.

"One time she had some friends over, and they said, 'hey this is pretty good, how can I get in on that,'" Clark said.

And that's how the Wednesday Supper Club started. At first, the club included five people, and it steadily grew to sever, 11 and 15. Before long, Clark was serving 25 different people once per week.

"I cooked ribs one night, and it must have gotten out around town," Clark said. "Because by the end of the night I had gotten rid of 50 slabs of ribs."

At that point, Clark decided to go into the catering business, opening Ultimate Choice Catering, a business that offers to support 'all occasions big and small.'

The Italian section of the menu inlucdes rigatoni with beef and sausage as well as chicken in wine, while the smoked meats section has ribs, pulled pork and homemade hame, bacon and sausage. Grandma Lizzie's Famous Fried Chicken is an option under the American Food section.

Ultimate Choice Catering Strip Pit ChickenClark also has some items of his own, including what he calls a popular dish, strip pit chicken, designed to create an unusually juicy chicken from the grill.

In all, Clark offers Italian, Smoked Meats, Cajun and American as his main options, while also including options for appetizers, side dishes and desserts.

Clark cooks all of the meals from his kitchen ina shed detached from his house that includes several stores and several refrigerators.

He said he hoped to turn his joy, cooking, into a profession.

"We would love to help anybody with any kind of pary," Clark said. "If you have good food, everything else is great."
